Catfish with Dijon Sauce

4 catfish fillets
3 tablespoons Butter or Margarine, melted
1 teaspoon Worcestershire Sauce
1 teaspoon Lemon Pepper
Dijon Sauce

 

Rinse fillets and blot dry. Combine butter, Worcestershire Sauce, and Lemon Pepper; mix. Brush both sides of fillets with butter mixture and place on a sheet of heavy-duty foil or in a well-greased hinged fish basket. Grill over medium-hot coals for 5-8 minutes; turn fillets and grill another 5-8 minutes or until fish flakes easily when tested with a fork.
 

Combine sour cream, Dijon Mustard, and Worcestershire Sauce. Heat 45 seconds in microwave or until warm.  Serve 2 tablespoons sauce over each catfish fillet.

Please be patient as we set up the new forums!! We have added forums, however it will take a few days to get them fully integrated into the website. I will post up here as soon as things are ready to roll.

UPDATE: The forums are LIVE, however the look may change a bit as I am still trying to get things themed with the site.

UPDATE:  The forums are DONE!!  I think I have the color theme right and all the bugs worked out of it, if you would happen to find one, let me know ASAP and I will address it.

April has brought alot of cold and rain here to Missouri and the Missouri river has dropped and risen so many times I honestly don't think many good folks has made it out onto the river for much river catfishing. But what the weather has done is forced many catfishermen out onto the local lakes and ponds for some excellent panfishing.  On a local Carroll County private lake Dave Hamilton of Norborne, Mo said "It has been the most productive fishing in the last 3 years! We have been catching 4" crappie it seems like forever, but this year is the exception."  Daily limits of slab sided crappie have been the norm for this year.

With the Missouri River running fast from the spring rains and snow melt from the Rocky Mountains, where can a guy catch him some nice Blue Catfish?  Jim Lynch of Leon, Iowa went out last week around 4/30/08-5/1/08 and said; "The water temp was at 51 degrees and the Blue Catfish have moved out from behind the dikes to the ends of the dikes. They are in a transition mode that will soon push them out into the main channel and outside curves as they prepare for the spawning season."
