Good Eats

Cajun Catfish
2 large catfish fillets
1 cup onions, chopped fine
1/2 cup celery, chopped fine
2 garlic cloves, minced
1/4 cup butter
1/4 cup flour
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 1-lb can sliced tomatoes
3 cups water
2 cups hot cooked rice


In a deep skillet, cook the butter and flour together over low heat to form a roux. Add the onions, celery, and garlic, and sauté until tender. Add the tomatoes, salt, peppers, and water. Simmer covered for 20 - 30 minutes. Add the fillets and cook until flaky, 15 - 20 minutes.  Serve over rice.       Serves 2.

NOTE: The amount of cayenne here is set for a mildly hot taste. It can be increased up to a full teaspoon for real Cajun flavor!

April has brought alot of cold and rain here to Missouri and the Missouri river has dropped and risen so many times I honestly don't think many good folks has made it out onto the river for much river catfishing. But what the weather has done is forced many catfishermen out onto the local lakes and ponds for some excellent panfishing.  On a local Carroll County private lake Dave Hamilton of Norborne, Mo said "It has been the most productive fishing in the last 3 years! We have been catching 4" crappie it seems like forever, but this year is the exception."  Daily limits of slab sided crappie have been the norm for this year.

With the Missouri River running fast from the spring rains and snow melt from the Rocky Mountains, where can a guy catch him some nice Blue Catfish?  Jim Lynch of Leon, Iowa went out last week around 4/30/08-5/1/08 and said; "The water temp was at 51 degrees and the Blue Catfish have moved out from behind the dikes to the ends of the dikes. They are in a transition mode that will soon push them out into the main channel and outside curves as they prepare for the spawning season."
